You're looking at pretty standard fare like hot dogs, nachos, popcorn, cheeseburgers, pizza, and several different takes on barbecue. There are brisket sandwiches, BBQ nachos, sausage wraps, Frito pies, and even brisket quesadillas.
There are a few items that go beyond the basics. You can grab chicken tenders, a Philly cheesesteak, roast beef sandwiches or head to Big Chicken in the south end zone. There's even sausage with peppers and onions and meatballs on a stick. Oh, and yes, you will definitely be able to get your pretzel on.
I'd have to say that if I were running the concessions, I'd probably have pretty much the same plan. It doesn't make much sense to get too elaborate with the offerings as long as Raider Alley and tailgating exist. The number of people who eat well before the game has to be pretty substantial, so once they're inside, a hot dog, some nachos or a barbecue sandwich may be exactly what they're looking for.

One other thing you need to know before you head to the stadium: bring a card or your phone, because cash isn't going to do you any good.
Galaxy Stadium is 100% cashless. Concession stands accept credit and debit cards along with Apple Pay, Google Pay and Samsung Pay. Some people still aren't happy with the idea and haven't mentally adapted to it, but that's the way it is.
If you want to eat, grab some merchandise or buy pretty much anything else once you're inside, you'll need to pay electronically.
