How Do We Define Big?

I guess the best way to hone in on the "biggest breakfast" is "the most people served breakfast in a 24-hour period".  Using that metric, we can clearly define pancakes/sausage/orange juice/coffee, etc. as "breakfast foods". So even if there are no eggs involved, we have a clear winner for "The Biggest Breakfast In Texas".

The Clear Winner

The Lubbock Lion's Club Pancake Festival takes the nod as "The Biggest Breakfast In All Of Texas". For a time it was also the biggest pancake festival in the world until the dirty birds in Springfield, Massachusetts came along and took the title. Still, this festival rules Texas from its home base in Lubbock, Texas.

A Lot Of Batter!

The event serves up three tons of pancake mix with over 320 gallons of syrup. All of that is just for starters too, because coffee, sausage links and so much more are involved. It's near impossible to figure out how many pancakes are served because it's an all-you-can-eat event, and of course, the size of the pancakes can vary from silver-dollar size to frisbee size.

Coming Clean

At this point, I must confess that I have been a cook at this festival for a couple of decades. You can always find me at grill #1 when the doors open and it is a mass of humanity. My best guess is that we knock out about 30-36 pancakes about every three minutes on each of the multiple grills.

A Community Event

If you truly wanted a snapshot of what Texas is like, this is the type of event that brings people of all stripes together. Lucky for you, you probably haven't missed this year's event happening on February 17th at the Lubbock Civic Center.
